Candied Grapefruit Peels

Texas red grapefruit season is here. It runs from October to April and it is a good opportunity to make some sweet treats for this end of the year. The long process is worth the result. You can coat the candied peels with dark or milk chocolate, toss them in sugar or add them in a cake.
Be sure to wash the fruits correctly before to start the recipe.
Ingredients
- 4 grapefruits
- 3 lemons
- 12 peppercorns
- 4 star anise
- 2 cinnamon sticks
- 2 vanilla pods
- Sugar
- Water
After you cut the peels, weight them and measure the same amount of sugar and water.
Tips:
• Put 3 pots of water to boil at the same time to avoid the wait between each operation to remove the peel bitterness.
• Keep the chocolate peels refrigerated
• Toss the peels with sugar at the last minute.
